I refurbishing a 1991 13" sport and recently purchased a 1997 Yamaha 40hp engine. I searched around and cant figure out what is the best prop size is. I will be using the boat for cruising and a little waterskiing / Tubing with the kids.

I have a similar setup as you. I'm running a Power Tech SS prop. I'm not sure what the size is as I was unable to read the numbers that are stamped on it. Later this afternoon I'll take the prop off and see if I can decipher any other writing that may be on it.
My Power Tech SS prop provides pretty good speed for us, I'm able to pull a water skier, pull a tube and basically anything else we can think of.

1966 13' Sport with a 1993 40hp Yamaha 2 Smoker
I have a 79 13 Sport with a 1998 40hp 2 stroke turning a Solas Aluminum 11X15 prop. It seems to do well for me. The whole shot is good and top end is also good. I'm hooking up a tach very soon. I will update as soon as I know those numbers. My prop would cost you around $80 bucks plus shipping. If you run in shallow water. I would stay away from SS props.

Ive been told 11x14 and 12x13.
I'm just not sure. I'm not finished the boat yet and was hoping to narrow it down before I have to buy one.

No problem.... I would think the 11x14 would be good also. I would imagine the whole shot with the 11x14 would be better than the 11x15. You may turn a few more RPMs with the 11x14 on top end. Either the 11x14 or the 11x15 would be good choices. Like I said, I don't have a tack. So, I'm going by what I think the engine should be sounding like to me. Not sure about your area but in the Virginia beach area we have propeller shops. The guy will sell you a prop and if your not satisfied. You can take it back and try a different prop until you get the one you like for the boat.
