how big engines on a Boston Whaler 22" 1981 mod?

I wonder if anyone have any experience with how big engines you can put on this boat without loosing too much stability? Today I have a 250hk Evinrude 2004 model, I will not do any changes at the moment but if something happens to the engine and I still have to change it, I will consider two engines instead of one. am a bit disappointed of the speed to day, it did 40 knts in the start of the season, and now, after two months of growing, its only goes in 38knts.
