Outside of "Durability" and price, is their any advantage to a s/s prop. vs an "aluminum" prop. (same matched pitch, rake, size) ? Are they faster ? Do they jump out of the hole more quickly than aluminium props. ?

Stainless steel is a harder metal, the blades of a SS prop do not flex like aluminum will when you pour the power to it.

Yes, stainless steel propellers will provide faster top speed, better fuel economy, faster acceleration, better grip, will allow higher motor mounting heights and may also improve the ride of your boat.
Because the blades are five times as strong, they are much less likely to be broken off or otherwise damaged. This may allow you to return to port after a propeller strike that would leave you stranded with an aluminum prop. This could save your life someday.
But other than that, there's not much advantage to using a stainless steel propeller.
