When my mechanic was showing me how to properly crank the engine, he mentioned something about the "Thermostat opening up" after the engined has started and water pump kicked in. What is the purpose of the "Thermostat" and does it need to be opened up before putting the motor in gear?

The thermostat works the same as on a car - the engine works best at a certain temperature, not too cold, and not too hot. When the engine is cold, the thermostat stays closed until the engine heats up, at which point it opens and allows cool water the flow through.
There's no way to manually open the thermostat, unless you remove it completely.

The engine needs the thermostat. It allows the engine to reach the proper running temp in a short amt of time.
