With the 2008 merc 135 and trimming for better ride is there a safety feature for not allowing you to trim to far out of water? I kept a watch on the pee stream,but I don't think you can raise it far enough to present a problem?

Your prop will start to cavitate and you'll lose performance before the cooling is affected. Trim for ease of steering (little to no pull from the engine in one direction) and you should be fine with cooling.

You trim to where the boat preforms the way you want it to, not just to where the steering is easy. The trim tab is for making the steering easy.
You cannot trim a Mercury 135 past the limits of the trim rams and unless you have your motor mounted extremely high on a jack plate, you will still have plenty of cooling water at that point.

Thanks it seemed like it was only trimming so far and stopping. Don't want to be looking back to check stream if not needed.
