I finally got Evenstar to a scale.
Highlander weight (empty) - 4780
Highlander hitched - 4900
Trailer axle weight - 2740
Tongue Weight - 120
Hull Weight - 1481 if you subtract gas, engine,trailer,ect.
Published Hull Weight is 1250 so I am 231 pounds over give or take. I don't have a full tank of gas in the boat so weight of gas is a guess, I did have a full tank of gas in the highlander when I weighed with the boat, but not empty. I will weight the boat again, this time with a full tank of gas in the boat, especially since I still need to install the stern seat and the console. I also need to adjust the tongue weight since at only 120 pounds she would sway badly over 50 MPH.

231 pounds? That's pretty good news. You really need to fill the fuel tank to get a good estimate of what the gasoline weighs, otherwise you don't really know how much is in there.
Also, how did you estimate the weights of everything else to arrive at your 1481 pound figure?

The only other things on the boat are
E-Tech 175HP - published weight 427 lbs
Jackplate - 60 pounds shipping weight
Trailer - 600 pounds, shipping weight
Trailer additions 40 pounds, include new axle, guide posts, new rollers maybe plus or minus a couple of pounds
The real swag in all this is the gas both from a car and boat especially since I have no good measure of how much is really in the boat tank. I will fill the boat tank next time, but right now it's not hooked up to the engine so I didn't want fuel spilling out of the hose that is hanging in my splashwell.
Other than that the boat is stripped, no console, no seats, no junk in the forward locker.
