I just finished a similar task of routing a transducer cable from the console to the stern on my 99' Dauntless 14, which is similar to your 16. Under the console toward the stern there should be a plastic fitting with a tube that runs all the way to the stern with access to the other end from the bilge access in the splashwell. The engine control lines also utilize this tube. You'll want to feed the transducer cable from stern to console. A metal fish tape run from the console to the stern then attaching the transducer cable to the end and pulling through is the best way to go. Also running a piece of rope along with the cable will allow ease of running additional cables in the future.
