Not knowing what the original is you might start with an environmental friendly paint remover like "Citristrip" or "Dumont" paint stripper.
You might be surprised that the original job was just painted over the gel coat and therefore after removal some high >5000 up sanding could give you a nice finish with buffing and waxing.
Start with the stripper on her. (I mean paint and boat, lol)
