All you need to do is get rid of the double bow roller bracket, and use a single bow roller instead, installed at the previous pivot point. The winch stand will have to be raised on the post, and post may have to be moved back slightly. This will make the winch hook easily accessible, and a saftey chain cha be attached to one of the U-bolt sides. I have this arrangement on my outrage 25 trailer. The bow roller should be positioned so that the bow eye of the boat snugs up right under it.

Looking again at the photos, to be able to use a single bow roller, the bracket that holds the winch may have to be replaced. This is because
the strap comes off the top of the winch, and has to pass under the roller to the bow eye. The photo shows this may not work with the existing winch bracket. New ones are readily available at trailer parts outlets.
