As mentioned, Mills has all of the canvas items needed for a Ribside Outrage 21, Besides the Flying Top Set shown here, which includes Flying Top (Bimini), Windshield and Forward Shelter:

they also have the replacement console Windscreen, and a full mooring cover. Side Curtains and an Aft or Drop Curtain are also available for the Flying Top Set.

I recommend the "Toast" color Sunbrella fabric as shown in the photo. this is the closest to the original duck canvas color used by Whaler back in 1971-72.

Canvas items with frame are tough to ship by a non-business seller, so even if you could find a good used top in the States, getting it shipped to France would not probably be feasible. So Mills is your best source.
