looking to make new interior of 15 ss, having trouble finding Mahogany in centeral NY. is it ok to use SAPELE?

You will not find mahogany in planks of solid wood wide enough to make Whaler seats simply because there are no old groth forests with trees big enough to make wide enough planks. Even the seats made by Nautical Lumber or Specialty Marine are made of pieces laminated together rather than one solid piece. This is why old whaler seats even if the wood is in horrible condtion command a good price because someone will either restore them or flip them over and use the side that was not exposed to the elements. If you can find Sapelle that wide I would use it as long as it is not the plywood variety as it will be hard to keep the edges sealed with epoxy and or varnish and sooner or later they will delaminate.
