I use a guy out on James Island who has a shop next to Kurt Oberly's High and Dry Boatworks Whaler restoration shop. The engine shop is Duke's Marine. He does great work but is very difficult to pin down with respect to when a job will be done. Excellent work, though, if you have the luxury of just dropping off the engine and can stand the wait.
